| Born and raised in St. Thomas, Jamaica, Easton
Hamilton spent his childhood years learning and developing skills
that would ultimately lead him to a career filled with fulfillment,
achievement and self growth. A boy with an eye for creativity and
a willingness to learn would take a journey that would lead to a life
with culinary delights and mouthwatering experiences.
Easton Hamilton developed a budding interest in the artistic preparation
of culinary delights. As early as six years old Easton remembers
spending an abundance of time inspecting his auntie working away
in the kitchen. The way she used creativity in mixing and combining
various ingredients to create many delicious meals that all could
enjoy, was pure inspiration. “I remember watching my auntie
in the kitchen and was intrigued by the passion and spirit that
she put forth when preparing meals. The aroma that arose and teased
my nostrils is something that lingers in my mind to this day,”
says Easton. Easton remembers on many occasions asking his auntie,
inquiring as to what was she cooking, what smelled so good that
made his palates explode with sheer excitement each time he sampled
one of her creations. It was from her that Easton would learn the
difference and the importance of various herbs and spices and the
techniques on how to properly combine these ingredients to create
a scrumptious meal that would be easily devoured.
Having migrated to Canada in 1980, Easton spent four years working
odd jobs here and there. There was a constant sense of dissatisfaction
and lack of fulfillment. It was as if something was missing. As
the years went by he came across a position working as a bus person
in a restaurant. “This was the stepping stone for me, in that
I was able to provide assistance to the Chef in this restaurant
and it was then that I knew that my passion for cooking could go
so much further,” say Easton.
Over the years Easton developed his skill and had the opportunity
to work with and learn from scores of artistic and inspired Chefs.
Through the sharing of ideas, he was able to incorporate his own
artistic visions into the preparation and the arrangement of his
culinary creations. “As an adult, I now realized that the
six year boy who was curious in his auntie’s kitchen has now
evolved into a man who has the zeal for creating appetizing and
visually creative meals.”
Today at La Maquette; the owner Ange Kanavas and I share the same
passions for quality cuisine. We work with French and Italian themes,
using our creativity to demonstrate culinary and scrumptious delights
that our patrons savour time after time.
